Work in the vineyard
- Terroir : the ground is a decomposition of arenas
granite which takes the form of silt and sand,
plot selection. - Climate and exposure: our vines are planted in
hillsides, facing South-East, at a hectare density of 4700
feet. The Cagna mountain peaks at 1400m and
surrounding the vineyard allows a strong thermal amplitude
between day and night. AOP Corsica Sartene. - VSperiods and crops: our work is entirely
organic (Ecocert certified). On 2 ha of Sciacarellu,
Niellucciu, and Minustellu, we practice a size in
cordon de royat, manual green work, plowing
light and phytosanitary treatments based on clay.
Cellar work
- Harvest: they are manual and carried out in the morning
in small crates. The yield per hectare is 35
hectoliters. - Winemaking and aging: after light scratching, the
bays are vatted in thermoregulated stainless steel and
windings and load shedding (2 per day) punctuate the
natural alcoholic fermentation without adding yeast. After
vatting for 5 weeks, the wines are aged in casks
of oak and half muids for 18 months. 30% Minustellu,
30% Sciacarellu, 30% Niellucciu.
The Perpetual Reserve
On the same principle as a Solera; each year, our Perpetual Reserve will be enriched with an additional vintage. The one we are offering you this year comes from the 2015, 2016, 2017, 2018, 2019, 2020, 2021 and 2022 vintages. We have planted on selected plots grape varieties adapted to each soil and from our Sartenese ampelographic history: Sciacarellu , Minustellu and Niellucciu.
